Ягодный кисель (Berry Blast) is a traditional Belarusian dessert that is perfect for summer. This refreshing and fruity kisiel is made with a variety of berries and is enjoyed by people of all ages.

Berry Blast (Ягодный кисель)

Ingredients

  • 2 cups mixed berries (strawberries, raspberries, blueberries)
  • 4 cups water
  • 1/2 cup sugar
  • 3 tbsp cornstarch
  • 1/4 cup cold water

Instructions

  1. In a saucepan, combine the mixed berries and 4 cups of water. Bring to a boil and then simmer for 5 minutes.
  2. Strain the berries to remove the pulp and seeds, leaving only the juice.
  3. Return the berry juice to the saucepan and add sugar. Bring to a boil.
  4. In a small bowl, mix the cornstarch with 1/4 cup of cold water until dissolved.
  5. Slowly pour the cornstarch mixture into the boiling berry juice, stirring constantly until the kisiel thickens.
  6. Remove from heat and let it cool for a few minutes.
  7. Pour the kisiel into serving bowls and refrigerate until set.
