Berry Pavlova (Ягодный павлова)

Ingredients

  • 6 egg whites
  • 1 1/2 cups sugar
  • 1 teaspoon white vinegar
  • 1 teaspoon cornstarch
  • 1 cup mixed berries (such as strawberries, blueberries, and raspberries)
  • 1 cup heavy cream
  • 1 tablespoon powdered sugar

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the egg whites until stiff peaks form.
  3. Gradually add the sugar, vinegar, and cornstarch while continuing to beat the mixture until it becomes glossy.
  4. Spoon the mixture onto the prepared baking sheet, forming a circle with a slight indentation in the center.
  5. Bake for 1 hour, then turn off the oven and let the pavlova cool completely inside the oven.
  6. Once the pavlova is cooled, whip the heavy cream with powdered sugar until stiff peaks form.
  7. Spread the whipped cream over the pavlova and top with mixed berries.
