Besan Curry (spicy Jhunka)

Ingredients

  • 2 cups besan (gram flour)
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2-3 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 2 tablespoons oil
  • Fresh coriander leaves for garnish
  • Salt to taste

Instructions

  1. In a bowl, mix besan with water to make a smooth batter.
  2. Heat oil in a pan and add cumin seeds and mustard seeds. Let them splutter.
  3. Add chopped onions, green chilies, and ginger-garlic paste. Sauté until the onions turn golden brown.
  4. Add turmeric powder, red chili powder, and salt. Mix well.
  5. Add the chopped tomatoes and cook until they turn soft.
  6. Pour the besan batter into the pan and stir continuously to avoid lumps.
  7. Cook the mixture on low heat until it thickens and leaves the sides of the pan.
  8. Garnish with fresh coriander leaves and serve hot.
