Ingredients

  • 1 kg beef ribs
  • 500 ml coconut milk
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 3 cloves garlic, minced
  • 5 shallots, thinly sliced
  • 2-inch galangal, sliced
  • 1-inch ginger, sliced
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 1/2 tsp sugar
  • 1/2 tsp white pepper
  • 4 cups water
  • 2 tbsp cooking oil

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Add the minced garlic, sliced shallots, galangal, and ginger. Sauté until fragrant.
  2. Add the beef ribs to the pot and cook until browned on all sides.
  3. Pour in the water and bring to a boil. Skim off any foam that rises to the surface.
  4. Reduce the heat to low, then add the lemongrass, kaffir lime leaves, coriander powder, turmeric powder, salt, sugar, and white pepper. Simmer for 1.5 to 2 hours, or until the beef is tender.
  5. Pour in the coconut milk and simmer for an additional 15 minutes.
  6. Adjust the seasoning if needed. Serve the Betawi Beef Ribs Soup hot with steamed rice or rice cakes.
