Ingredients
- 1 kg beef ribs
- 500 ml coconut milk
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 3 cloves garlic, minced
- 5 shallots, thinly sliced
- 2-inch galangal, sliced
- 1-inch ginger, sliced
- 1 tsp coriander powder
- 1 tsp turmeric powder
- 1 tsp salt
- 1/2 tsp sugar
- 1/2 tsp white pepper
- 4 cups water
- 2 tbsp cooking oil
Instructions
- In a large pot, heat the cooking oil over medium heat. Add the minced garlic, sliced shallots, galangal, and ginger. Sauté until fragrant.
- Add the beef ribs to the pot and cook until browned on all sides.
- Pour in the water and bring to a boil. Skim off any foam that rises to the surface.
- Reduce the heat to low, then add the lemongrass, kaffir lime leaves, coriander powder, turmeric powder, salt, sugar, and white pepper. Simmer for 1.5 to 2 hours, or until the beef is tender.
- Pour in the coconut milk and simmer for an additional 15 minutes.
- Adjust the seasoning if needed. Serve the Betawi Beef Ribs Soup hot with steamed rice or rice cakes.
