Ingredients

  • 500g beef, cut into cubes
  • 400ml coconut milk
  • 2 lemongrass stalks, bruised
  • 3 kaffir lime leaves
  • 3 tomatoes, diced
  • 2 potatoes, diced
  • 4 shallots, thinly sliced
  • 3 cloves garlic, minced
  • 2 Tbsp cooking oil
  • 1 Tbsp tamarind paste
  • Salt and sugar to taste
  • Water

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Add the shallots and garlic, and sauté until fragrant.
  2. Add the beef cubes and cook until browned.
  3. Pour in enough water to cover the beef, then add the lemongrass, kaffir lime leaves, and tamarind paste. Simmer for 1.5 hours or until the beef is tender.
  4. Add the coconut milk, tomatoes, and potatoes. Simmer for another 30 minutes.
  5. Season with salt and sugar to taste.
  6. Serve the Soto Betawi hot with steamed rice or rice cakes.
