Betawi Beef Soup (betawi Soto Betawi)
Betawi Beef Soup, also known as Soto Betawi, is a traditional dish from the Betawi cuisine of Indonesia. This hearty and flavorful soup is made with tender beef, coconut milk, and a blend of aromatic spices.
Ingredients
- 500g beef, cut into cubes
- 400ml coconut milk
- 2 lemongrass stalks, bruised
- 3 kaffir lime leaves
- 3 tomatoes, diced
- 2 potatoes, diced
- 4 shallots, thinly sliced
- 3 cloves garlic, minced
- 2 Tbsp cooking oil
- 1 Tbsp tamarind paste
- Salt and sugar to taste
- Water
Instructions
- In a large pot, heat the cooking oil over medium heat. Add the shallots and garlic, and sauté until fragrant.
- Add the beef cubes and cook until browned.
- Pour in enough water to cover the beef, then add the lemongrass, kaffir lime leaves, and tamarind paste. Simmer for 1.5 hours or until the beef is tender.
- Add the coconut milk, tomatoes, and potatoes. Simmer for another 30 minutes.
- Season with salt and sugar to taste.
- Serve the Soto Betawi hot with steamed rice or rice cakes.
