Betawi Beef Soup Bliss (soto Betawi Bliss)
Soto Betawi Bliss is a traditional beef soup from the Betawi region of Indonesia. This rich and flavorful soup is a popular dish in Javanese cuisine, known for its aromatic spices and creamy coconut milk base.
Ingredients
- 500g beef, thinly sliced
- 2 potatoes, diced
- 3 tomatoes, chopped
- 4 shallots, thinly sliced
- 3 cloves garlic, minced
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 2 bay leaves
- 1-inch galangal, sliced
- 1-inch ginger, sliced
- 2 cups coconut milk
- 4 cups beef broth
- 2 tablespoons cooking oil
- Salt and sugar to taste
Instructions
- In a large pot, heat the cooking oil over medium heat. Add the shallots, garlic, lemongrass, galangal, and ginger. Sauté until fragrant.
- Add the beef slices and cook until browned.
- Pour in the beef broth and bring to a boil. Reduce the heat and let it simmer for 30 minutes.
- Add the potatoes, tomatoes, kaffir lime leaves, and bay leaves. Simmer for another 20 minutes until the beef is tender and the potatoes are cooked.
- Pour in the coconut milk and season with salt and sugar. Simmer for an additional 10 minutes.
- Remove from heat and serve the Soto Betawi hot with steamed rice or rice cakes.
