Ingredients

  • 500g beef, thinly sliced
  • 2 potatoes, diced
  • 3 tomatoes, chopped
  • 4 shallots, thinly sliced
  • 3 cloves garlic, minced
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 2 bay leaves
  • 1-inch galangal, sliced
  • 1-inch ginger, sliced
  • 2 cups coconut milk
  • 4 cups beef broth
  • 2 tablespoons cooking oil
  • Salt and sugar to taste

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Add the shallots, garlic, lemongrass, galangal, and ginger. Sauté until fragrant.
  2. Add the beef slices and cook until browned.
  3. Pour in the beef broth and bring to a boil. Reduce the heat and let it simmer for 30 minutes.
  4. Add the potatoes, tomatoes, kaffir lime leaves, and bay leaves. Simmer for another 20 minutes until the beef is tender and the potatoes are cooked.
  5. Pour in the coconut milk and season with salt and sugar. Simmer for an additional 10 minutes.
  6. Remove from heat and serve the Soto Betawi hot with steamed rice or rice cakes.
