Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup jasmine rice
- 6 cups chicken broth
- 2 cloves garlic, minced

- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 2 green onions, thinly sliced
- 2 hard-boiled eggs, sliced
- Fried shallots for garnish
Instructions
- In a large pot, bring the chicken broth to a boil.
- Add the chicken breasts, jasmine rice, garlic, ginger, white pepper, soy sauce, and sesame oil to the pot.
- Reduce the heat to low, cover, and simmer for 1 hour, stirring occasionally.
- Remove the chicken breasts from the pot and shred them using two forks.
- Return the shredded chicken to the pot and stir to combine.
- Ladle the congee into serving bowls and top with sliced green onions, hard-boiled egg slices, and fried shallots.
