Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup jasmine rice
  • 6 cups chicken broth
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 teaspoon ground white pepper
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, thinly sliced
  • 2 hard-boiled eggs, sliced
  • Fried shallots for garnish

Instructions

  1. In a large pot, bring the chicken broth to a boil.
  2. Add the chicken breasts, jasmine rice, garlic, ginger, white pepper, soy sauce, and sesame oil to the pot.
  3. Reduce the heat to low, cover, and simmer for 1 hour, stirring occasionally.
  4. Remove the chicken breasts from the pot and shred them using two forks.
  5. Return the shredded chicken to the pot and stir to combine.
  6. Ladle the congee into serving bowls and top with sliced green onions, hard-boiled egg slices, and fried shallots.
