Betawi Cow Feet Soup (betawi Soto Kaki Sapi)
Betawi Cow Feet Soup, also known as Betawi Soto Kaki Sapi, is a traditional Indonesian soup from the Betawi cuisine. It is a flavorful and hearty soup made with tender cow feet and aromatic spices.
Ingredients
- 2 lbs cow feet, cleaned and cut into pieces
- 8 cups water
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 3 cloves garlic, minced
- 1-inch ginger, sliced
- 2 tomatoes, quartered
- 2 tablespoons vegetable oil
- Salt to taste
- Pepper to taste
- 2 tablespoons fried shallots, for garnish
Instructions
- In a large pot, bring the water to a boil. Add the cow feet and cook for 10 minutes. Remove from heat and drain the cow feet. Discard the water and rinse the cow feet under cold water.
- Heat the vegetable oil in the same pot over medium heat. Sauté the garlic and ginger until fragrant.
- Add the lemongrass, kaffir lime leaves, and tomatoes. Cook for 2 minutes.
- Return the cow feet to the pot and pour in 8 cups of water. Bring to a boil, then reduce the heat to low. Simmer for 2-3 hours until the cow feet are tender.
- Season with salt and pepper to taste.
- Serve the Betawi Cow Feet Soup hot, garnished with fried shallots.
