Betawi Cow Feet Soup (betawi Soto Kaki Sapi)

Ingredients

  • 2 lbs cow feet, cleaned and cut into pieces
  • 8 cups water
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 3 cloves garlic, minced
  • 1-inch ginger, sliced
  • 2 tomatoes, quartered
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons fried shallots, for garnish

Instructions

  1. In a large pot, bring the water to a boil. Add the cow feet and cook for 10 minutes. Remove from heat and drain the cow feet. Discard the water and rinse the cow feet under cold water.
  2. Heat the vegetable oil in the same pot over medium heat. Sauté the garlic and ginger until fragrant.
  3. Add the lemongrass, kaffir lime leaves, and tomatoes. Cook for 2 minutes.
  4. Return the cow feet to the pot and pour in 8 cups of water. Bring to a boil, then reduce the heat to low. Simmer for 2-3 hours until the cow feet are tender.
  5. Season with salt and pepper to taste.
  6. Serve the Betawi Cow Feet Soup hot, garnished with fried shallots.
