Ingredients
- 4 whole fish (such as snapper or grouper), cleaned and gutted
- 5 cloves garlic, minced
- 2 red chilies, sliced
- 2 tomatoes, sliced
- 1 teaspoon tamarind paste
- 1 teaspoon salt
- 1 teaspoon sugar
- 2 tablespoons sweet soy sauce (kecap manis)
- 2 tablespoons vegetable oil
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix together the minced garlic, sliced red chilies, tamarind paste, salt, sugar, sweet soy sauce, and vegetable oil to make a marinade.
- Make 3 diagonal cuts on each side of the fish and rub the marinade all over the fish, including inside the cuts.
- Place the sliced tomatoes inside the fish cavity.
- Grill the fish for about 7-8 minutes on each side, or until the fish is cooked through and has a nice charred exterior.
- Remove from the grill and serve hot.
