Ingredients

  • 4 whole fish (such as snapper or grouper), cleaned and gutted
  • 5 cloves garlic, minced
  • 2 red chilies, sliced
  • 2 tomatoes, sliced
  • 1 teaspoon tamarind paste
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 2 tablespoons vegetable oil

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix together the minced garlic, sliced red chilies, tamarind paste, salt, sugar, sweet soy sauce, and vegetable oil to make a marinade.
  3. Make 3 diagonal cuts on each side of the fish and rub the marinade all over the fish, including inside the cuts.
  4. Place the sliced tomatoes inside the fish cavity.
  5. Grill the fish for about 7-8 minutes on each side, or until the fish is cooked through and has a nice charred exterior.
  6. Remove from the grill and serve hot.
