Ingredients
- 500g tapioca flour
- 400ml coconut milk
- 200g granulated sugar
- 1/2 tsp salt
- 5 pandan leaves, knotted
- 1/2 tsp baking powder
- 1/2 tsp yeast
- Green food coloring (optional)
Instructions
- In a large bowl, mix tapioca flour, coconut milk, sugar, and salt until well combined.
- Add the knotted pandan leaves and let the mixture sit for at least 4 hours or overnight to infuse the flavors.
- After the resting period, remove the pandan leaves and add baking powder, yeast, and green food coloring (if using).
- Preheat the oven to 180°C (350°F) and grease a round cake pan.
- Pour the batter into the prepared pan and bake for 45 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean.
- Let the cake cool before slicing and serving.
