Ingredients

  • 500g tapioca flour
  • 400ml coconut milk
  • 200g granulated sugar
  • 1/2 tsp salt
  • 5 pandan leaves, knotted
  • 1/2 tsp baking powder
  • 1/2 tsp yeast
  • Green food coloring (optional)

Instructions

  1. In a large bowl, mix tapioca flour, coconut milk, sugar, and salt until well combined.
  2. Add the knotted pandan leaves and let the mixture sit for at least 4 hours or overnight to infuse the flavors.
  3. After the resting period, remove the pandan leaves and add baking powder, yeast, and green food coloring (if using).
  4. Preheat the oven to 180°C (350°F) and grease a round cake pan.
  5. Pour the batter into the prepared pan and bake for 45 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  6. Let the cake cool before slicing and serving.
