Ingredients
- 1 kg lamb, cut into chunks
- 2 cups coconut milk
- 4 kaffir lime leaves
- 2 lemongrass stalks, bruised
- 5 shallots, finely chopped
- 4 cloves garlic, minced
- 3 red chilies, sliced
- 1 inch galangal, sliced
- 1 inch ginger, sliced
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon fennel powder
- Salt to taste
- Sugar to taste
- Water
Instructions
- In a large pot, heat some oil and sauté the shallots, garlic, red chilies, galangal, and ginger until fragrant.
- Add the lamb chunks and cook until they are browned on all sides.
- Stir in the turmeric, coriander, cumin, and fennel powders, then pour in the coconut milk and add the kaffir lime leaves and lemongrass.
- Season with salt and sugar, then add enough water to cover the meat.
- Cover the pot and simmer over low heat for about 1 hour, or until the lamb is tender and the sauce has thickened.
- Adjust the seasoning if needed, then serve the Betawi Lamb Curry hot with steamed rice.
