Ingredients

  • 2 lbs lamb feet, cleaned and cut into pieces
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 stalk lemongrass, bruised
  • 3 kaffir lime leaves
  • 1-inch galangal, bruised
  • 1-inch ginger, bruised
  • 1 tsp salt
  • 1/2 tsp ground white pepper
  • 8 cups water
  • 2 tbsp vegetable oil
  • 2 tbsp fried shallots for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic. Sauté until fragrant.
  2. Add the lamb feet to the pot and cook until browned.
  3. Pour in the water and bring to a boil. Skim off any foam that rises to the surface.
  4. Add the lemongrass, kaffir lime leaves, galangal, ginger, salt, and white pepper. Reduce the heat to low, cover, and simmer for 2 hours.
  5. Add the diced tomatoes, carrots, and potatoes. Continue to simmer for an additional 30 minutes or until the lamb feet are tender.
  6. Once the lamb feet are tender, remove the pot from the heat. Discard the lemongrass, kaffir lime leaves, galangal, and ginger.
  7. Divide the soup into serving bowls and garnish with fried shallots. Serve hot with steamed rice.
