Betawi Lamb Feet Soup (betawi Sop Kaki Kambing)
Betawi Lamb Feet Soup, or Sop Kaki Kambing, is a traditional dish from the Betawi cuisine of Indonesia. This hearty and flavorful soup is a popular comfort food, especially during the colder months.
Ingredients
- 2 lbs lamb feet, cleaned and cut into pieces
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 stalk lemongrass, bruised
- 3 kaffir lime leaves
- 1-inch galangal, bruised
- 1-inch ginger, bruised
- 1 tsp salt
- 1/2 tsp ground white pepper
- 8 cups water
- 2 tbsp vegetable oil
- 2 tbsp fried shallots for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic. Sauté until fragrant.
- Add the lamb feet to the pot and cook until browned.
- Pour in the water and bring to a boil. Skim off any foam that rises to the surface.
- Add the lemongrass, kaffir lime leaves, galangal, ginger, salt, and white pepper. Reduce the heat to low, cover, and simmer for 2 hours.
- Add the diced tomatoes, carrots, and potatoes. Continue to simmer for an additional 30 minutes or until the lamb feet are tender.
- Once the lamb feet are tender, remove the pot from the heat. Discard the lemongrass, kaffir lime leaves, galangal, and ginger.
- Divide the soup into serving bowls and garnish with fried shallots. Serve hot with steamed rice.
