Ingredients

  • 2 cups cooked white rice
  • 300g lamb, diced
  • 3 eggs, beaten
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 red chilies, sliced
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 1 teaspoon shrimp paste (terasi)
  • 1 teaspoon salt
  • 1/2 teaspoon ground white pepper
  • 3 tablespoons vegetable oil

Instructions

  1. Heat 1 tablespoon of oil in a wok or large frying pan over medium heat. Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
  2. Heat the remaining oil in the same wok. Add the chopped onion, minced garlic, and sliced red chilies. Sauté until fragrant.
  3. Add the diced lamb to the wok and cook until browned.
  4. Stir in the sweet soy sauce, shrimp paste, salt, and white pepper.
  5. Add the cooked rice to the wok and stir-fry with the lamb mixture until well combined.
  6. Finally, add the scrambled eggs back into the wok and toss everything together until heated through.
  7. Transfer the Betawi Lamb Fried Rice to serving plates and serve hot.
