Ingredients
- 2 cups cooked white rice
- 300g lamb, diced
- 3 eggs, beaten
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 2 tablespoons sweet soy sauce (kecap manis)
- 1 teaspoon shrimp paste (terasi)
- 1 teaspoon salt
- 1/2 teaspoon ground white pepper
- 3 tablespoons vegetable oil
Instructions
- Heat 1 tablespoon of oil in a wok or large frying pan over medium heat. Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
- Heat the remaining oil in the same wok. Add the chopped onion, minced garlic, and sliced red chilies. Sauté until fragrant.
- Add the diced lamb to the wok and cook until browned.
- Stir in the sweet soy sauce, shrimp paste, salt, and white pepper.
- Add the cooked rice to the wok and stir-fry with the lamb mixture until well combined.
- Finally, add the scrambled eggs back into the wok and toss everything together until heated through.
- Transfer the Betawi Lamb Fried Rice to serving plates and serve hot.
