Betawi Mixed Rice (betawi Nasi Bogana)
Betawi Mixed Rice, also known as Betawi Nasi Bogana, is a popular dish from the Betawi cuisine of Indonesia. This flavorful mixed rice dish is a combination of various side dishes served with fragrant rice, creating a delicious and satisfying meal.
Ingredients
- 2 cups jasmine rice
- 400g chicken, diced
- 200g tempeh, sliced
- 4 eggs, hard-boiled
- 1 cucumber, sliced
- 4 shallots, thinly sliced
- 4 red chilies, sliced
- 4 lime leaves
- 4 lemongrass stalks, bruised
- 200ml coconut milk
- 4 tablespoons sweet soy sauce (kecap manis)
- 4 tablespoons cooking oil
- Salt to taste
Instructions
- In a pot, wash the jasmine rice and cook it with 4 cups of water until done. Fluff the rice with a fork and set aside.
- Heat 2 tablespoons of cooking oil in a pan and sauté the shallots, red chilies, lime leaves, and lemongrass until fragrant.
- Add the diced chicken and cook until it turns golden brown. Then, add the coconut milk and sweet soy sauce. Simmer until the chicken is fully cooked and the sauce thickens.
- In another pan, heat the remaining 2 tablespoons of cooking oil and fry the tempeh slices until crispy. Remove from the pan and set aside.
- Slice the hard-boiled eggs in half and arrange all the side dishes on a serving plate.
- To serve, place a portion of fragrant rice on a plate, then arrange the chicken, tempeh, sliced cucumber, and hard-boiled egg on the side. Drizzle with the remaining sauce from the chicken. Serve hot.
