Betawi Mixed Rice (betawi Nasi Pecel)

Ingredients

  • 2 cups of rice
  • 200g of tempeh, sliced
  • 200g of tofu, diced
  • 1 cup of long beans, cut into 2-inch pieces
  • 1 cup of bean sprouts
  • 4 hard-boiled eggs, halved
  • 1 cucumber, sliced
  • 4 tablespoons of fried shallots
  • 4 tablespoons of peanut sauce
  • 4 tablespoons of sweet soy sauce
  • 4 red chili peppers, sliced (optional)

Instructions

  1. Wash the rice and cook it in a rice cooker or pot.
  2. In a pan, fry the tempeh and tofu until golden brown. Set aside.
  3. Blanch the long beans and bean sprouts in boiling water for 1-2 minutes. Drain and set aside.
  4. Arrange the cooked rice, fried tempeh, tofu, blanched vegetables, hard-boiled eggs, and sliced cucumber on serving plates.
  5. Drizzle with peanut sauce and sweet soy sauce. Garnish with fried shallots and sliced chili peppers if desired.
