Betawi Mixed Vegetables (betawi Pecel Betawi)
Betawi Mixed Vegetables, also known as Pecel Betawi, is a traditional dish from the Betawi cuisine of Indonesia. This flavorful and nutritious dish is made with a variety of mixed vegetables and a delicious peanut sauce.
Ingredients
- 1 cup green beans, trimmed
- 1 cup bean sprouts
- 1 cup water spinach (kangkung)
- 1 cup chayote, diced
- 1 cup cabbage, shredded
- 1 cup tofu, fried and cut into cubes
- 1 cup tempeh, fried and cut into cubes
- 1 cup boiled potatoes, cut into cubes
- 1 cup lontong (compressed rice cake), cut into cubes
- 1 cup peanuts, roasted and ground
- 4 cloves garlic
- 4 red chilies
- 2 tablespoons palm sugar
- 1 teaspoon tamarind paste
- Salt to taste
Instructions
- Blanch the green beans, bean sprouts, water spinach, and chayote in boiling water for 2-3 minutes. Drain and set aside.
- In a blender, combine the roasted peanuts, garlic, red chilies, palm sugar, tamarind paste, and salt. Blend into a smooth paste to make the peanut sauce.
- Arrange the blanched vegetables, fried tofu, fried tempeh, boiled potatoes, and lontong on a serving plate.
- Pour the peanut sauce over the vegetables and serve the Pecel Betawi immediately.
