Betawi Noodle Soup (betawi Soto Mie)

Ingredients

  • 400g egg noodles
  • 200g chicken breast, sliced
  • 2 eggs, hard-boiled and sliced
  • 100g bean sprouts
  • 2 stalks green onions, chopped
  • 2 tablespoons fried shallots
  • 1 tablespoon sweet soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 teaspoon ground white pepper
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon turmeric powder
  • 4 cups chicken broth

Instructions

  1. Boil the egg noodles according to the package instructions. Drain and set aside.
  2. In a pot, heat the vegetable oil over medium heat. Add the ground coriander, cumin, and turmeric. Cook for 1 minute until fragrant.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the chicken breast, salt, and sugar. Simmer for 15 minutes until the chicken is cooked through.
  5. Divide the cooked noodles into serving bowls. Top with bean sprouts, sliced eggs, and chopped green onions.
  6. Pour the hot chicken broth over the noodles and toppings.
  7. Drizzle with sweet soy sauce and lime juice. Garnish with fried shallots and ground white pepper.
