Ingredients
- 400g egg noodles
- 200g chicken breast, sliced
- 2 eggs, hard-boiled and sliced
- 100g bean sprouts
- 2 stalks green onions, chopped
- 2 tablespoons fried shallots
- 1 tablespoon sweet soy sauce
- 1 tablespoon lime juice
- 1 tablespoon vegetable oil
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/2 teaspoon ground white pepper
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1/2 teaspoon turmeric powder
- 4 cups chicken broth
Instructions
- Boil the egg noodles according to the package instructions. Drain and set aside.
- In a pot, heat the vegetable oil over medium heat. Add the ground coriander, cumin, and turmeric. Cook for 1 minute until fragrant.
- Pour in the chicken broth and bring to a boil.
- Add the chicken breast, salt, and sugar. Simmer for 15 minutes until the chicken is cooked through.
- Divide the cooked noodles into serving bowls. Top with bean sprouts, sliced eggs, and chopped green onions.
- Pour the hot chicken broth over the noodles and toppings.
- Drizzle with sweet soy sauce and lime juice. Garnish with fried shallots and ground white pepper.
