Ingredients

  • 2 lbs oxtail
  • 4 cups beef broth
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 inch ginger, sliced
  • 1 stalk lemongrass, bruised
  • 1 tomato, diced
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat vegetable oil over medium heat. Add chopped onion, minced garlic, and sliced ginger. Sauté until fragrant.
  2. Add oxtail to the pot and brown on all sides.
  3. Pour in beef broth and add bay leaves and lemongrass. Bring to a boil, then reduce heat and simmer for 2.5 hours, or until the oxtail is tender.
  4. Add carrots, potatoes, and diced tomato to the pot. Continue to simmer for another 30 minutes, or until the vegetables are cooked through.
  5. Season with salt and pepper to taste. Remove from heat and serve hot.
