Betawi Oxtail Soup (betawi Sop Buntut)
Betawi Oxtail Soup, or Sop Buntut, is a traditional Indonesian dish that originated from the Betawi people of Jakarta. This rich and flavorful soup is made with oxtail, vegetables, and a blend of aromatic spices, making it a hearty and comforting meal.
Ingredients
- 2 lbs oxtail
- 4 cups beef broth
- 2 carrots, sliced
- 2 potatoes, cubed
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 bay leaves
- 1 inch ginger, sliced
- 1 stalk lemongrass, bruised
- 1 tomato, diced
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat vegetable oil over medium heat. Add chopped onion, minced garlic, and sliced ginger. Sauté until fragrant.
- Add oxtail to the pot and brown on all sides.
- Pour in beef broth and add bay leaves and lemongrass. Bring to a boil, then reduce heat and simmer for 2.5 hours, or until the oxtail is tender.
- Add carrots, potatoes, and diced tomato to the pot. Continue to simmer for another 30 minutes, or until the vegetables are cooked through.
- Season with salt and pepper to taste. Remove from heat and serve hot.
