Ingredients
- 4 eggs
- 100g glutinous rice
- 50g grated coconut
- 2 shallots, thinly sliced
- 1/2 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/2 tsp salt
- 1/4 tsp sugar
- 2 tbsp vegetable oil
Instructions
- In a bowl, beat the eggs and set aside.
- Heat a non-stick pan over medium heat and add the glutinous rice. Cook, stirring constantly, until the rice is slightly toasted and fragrant.
- Add the grated coconut, ground coriander, ground turmeric, salt, and sugar to the pan. Cook for another 2-3 minutes.
- Reduce the heat to low and pour the beaten eggs over the rice mixture. Cook until the omelette is set.
- Meanwhile, heat the vegetable oil in a separate pan and fry the sliced shallots until crispy and golden brown.
- Once the omelette is cooked, transfer it to a serving plate and top with the crispy fried shallots.
