Ingredients

  • 4 eggs
  • 100g glutinous rice
  • 50g grated coconut
  • 2 shallots, thinly sliced
  • 1/2 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/2 tsp salt
  • 1/4 tsp sugar
  • 2 tbsp vegetable oil

Instructions

  1. In a bowl, beat the eggs and set aside.
  2. Heat a non-stick pan over medium heat and add the glutinous rice. Cook, stirring constantly, until the rice is slightly toasted and fragrant.
  3. Add the grated coconut, ground coriander, ground turmeric, salt, and sugar to the pan. Cook for another 2-3 minutes.
  4. Reduce the heat to low and pour the beaten eggs over the rice mixture. Cook until the omelette is set.
  5. Meanwhile, heat the vegetable oil in a separate pan and fry the sliced shallots until crispy and golden brown.
  6. Once the omelette is cooked, transfer it to a serving plate and top with the crispy fried shallots.
