Ingredients
- 2 cups basmati rice
- 500g lamb, cut into chunks
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 2 teaspoons ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground cinnamon
- 4 cups chicken broth
- 1/2 cup raisins
- 1/4 cup sliced almonds
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the onions and garlic, and cook until softened.
- Add the lamb chunks and cook until browned on all sides.
- Stir in the ground coriander, cumin, turmeric, and cinnamon. Cook for 2 minutes to toast the spices.
- Add the basmati rice and stir to coat with the spices.
- Pour in the chicken broth and bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
- Stir in the raisins and almonds, and season with salt and pepper.
- Let the rice sit, covered, for 5 minutes before fluffing with a fork.
