Ingredients

  • 2 cups basmati rice
  • 500g lamb, cut into chunks
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • 4 cups chicken broth
  • 1/2 cup raisins
  • 1/4 cup sliced almonds
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onions and garlic, and cook until softened.
  2. Add the lamb chunks and cook until browned on all sides.
  3. Stir in the ground coriander, cumin, turmeric, and cinnamon. Cook for 2 minutes to toast the spices.
  4. Add the basmati rice and stir to coat with the spices.
  5. Pour in the chicken broth and bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
  6. Stir in the raisins and almonds, and season with salt and pepper.
  7. Let the rice sit, covered, for 5 minutes before fluffing with a fork.
