Ingredients

  • 500g beef skin, boiled and cut into small pieces
  • 400ml coconut milk
  • 4 shallots, finely chopped
  • 3 cloves garlic, minced
  • 3 red chilies, sliced
  • 2 bay leaves
  • 1 lemongrass stalk, bruised
  • 1 tsp tamarind paste
  • 1 tsp sugar
  • Salt to taste
  • Water

Instructions

  1. In a pan, heat some oil and sauté the shallots, garlic, and red chilies until fragrant.
  2. Add the beef skin pieces and cook until they are slightly browned.
  3. Pour in the coconut milk, add the bay leaves, lemongrass, tamarind paste, sugar, and salt. Simmer for 45 minutes, stirring occasionally.
  4. If the sauce becomes too thick, add some water to reach the desired consistency.
  5. Once the beef skin is tender and the sauce has thickened, the dish is ready to be served.
