Ingredients
- 500g beef skin, boiled and cut into small pieces
- 400ml coconut milk
- 4 shallots, finely chopped
- 3 cloves garlic, minced
- 3 red chilies, sliced
- 2 bay leaves
- 1 lemongrass stalk, bruised
- 1 tsp tamarind paste
- 1 tsp sugar
- Salt to taste

Instructions
- In a pan, heat some oil and sauté the shallots, garlic, and red chilies until fragrant.
- Add the beef skin pieces and cook until they are slightly browned.
- Pour in the coconut milk, add the bay leaves, lemongrass, tamarind paste, sugar, and salt. Simmer for 45 minutes, stirring occasionally.
- If the sauce becomes too thick, add some water to reach the desired consistency.
- Once the beef skin is tender and the sauce has thickened, the dish is ready to be served.
