Ingredients
- 500g chicken liver, cleaned and cut into bite-sized pieces
- 4 shallots, finely sliced
- 5 red chilies, finely chopped
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 2 bay leaves
- 1 lemongrass, bruised
- 1 tsp tamarind paste
- 1 tsp sugar
- 1/2 cup coconut milk
- Salt to taste
- Oil for frying
Instructions
- Heat oil in a pan and fry the chicken liver until cooked. Set aside.
- In the same pan, sauté the shallots, garlic, and chilies until fragrant.
- Add the tomatoes, bay leaves, and lemongrass. Cook until the tomatoes are soft.
- Add tamarind paste, sugar, and salt. Stir well.
- Pour in the coconut milk and bring to a simmer.
- Add the fried chicken liver and cook for another 5 minutes.
- Remove from heat and serve hot with steamed rice.
