Ingredients

  • 2 cups water
  • 1 cup coconut milk
  • 200g tempeh, cubed
  • 2 cups chayote, peeled and diced
  • 1 cup long beans, cut into 2-inch pieces
  • 2 tomatoes, diced
  • 4 shallots, thinly sliced
  • 3 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 lemongrass stalk, bruised
  • 3 kaffir lime leaves
  • 1 teaspoon tamarind paste
  • 1 teaspoon palm sugar
  • Salt to taste

Instructions

  1. In a large pot, bring water and coconut milk to a boil.
  2. Add tempeh, chayote, long beans, tomatoes, shallots, garlic, red chilies, lemongrass, and kaffir lime leaves to the pot.
  3. Simmer over medium heat for 30 minutes, or until the vegetables are tender.
  4. Stir in tamarind paste, palm sugar, and salt. Cook for an additional 10 minutes.
  5. Remove from heat and serve the Betawi Vegetable Stew hot.
