Ingredients
- 2 cups water
- 1 cup coconut milk
- 200g tempeh, cubed
- 2 cups chayote, peeled and diced
- 1 cup long beans, cut into 2-inch pieces
- 2 tomatoes, diced
- 4 shallots, thinly sliced
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 1 lemongrass stalk, bruised
- 3 kaffir lime leaves
- 1 teaspoon tamarind paste
- 1 teaspoon palm sugar
- Salt to taste
Instructions
- In a large pot, bring water and coconut milk to a boil.
- Add tempeh, chayote, long beans, tomatoes, shallots, garlic, red chilies, lemongrass, and kaffir lime leaves to the pot.
- Simmer over medium heat for 30 minutes, or until the vegetables are tender.
- Stir in tamarind paste, palm sugar, and salt. Cook for an additional 10 minutes.
- Remove from heat and serve the Betawi Vegetable Stew hot.
