Ingredients

  • 1 cup sliced cabbage

  • 1 cup diced tofu
  • 1 cup sliced tempeh
  • 2 cups coconut milk
  • 2 cups vegetable broth
  • 3 shallots, sliced
  • 3 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • Sugar to taste
  • 2 tablespoons cooking oil

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Sauté the shallots, garlic, and red chilies until fragrant.
  2. Add the turmeric powder and coriander powder, and continue to sauté for another minute.
  3. Pour in the coconut milk and vegetable broth, then bring to a simmer.
  4. Add the tofu, tempeh, carrots, and green beans. Let it simmer for 15 minutes.
  5. Finally, add the cabbage and season with salt and sugar to taste. Cook for an additional 5 minutes until the vegetables are tender.
  6. Serve the Betawi Vegetable Stew hot with steamed rice.
