Ingredients
- 1 cup sliced cabbage
- 1 cup chopped green beans
- 1 cup sliced carrots
- 1 cup diced tofu
- 1 cup sliced tempeh
- 2 cups coconut milk
- 2 cups vegetable broth
- 3 shallots, sliced
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- Salt to taste
- Sugar to taste
- 2 tablespoons cooking oil
Instructions
- In a large pot, heat the cooking oil over medium heat. Sauté the shallots, garlic, and red chilies until fragrant.
- Add the turmeric powder and coriander powder, and continue to sauté for another minute.
- Pour in the coconut milk and vegetable broth, then bring to a simmer.
- Add the tofu, tempeh, carrots, and green beans. Let it simmer for 15 minutes.
- Finally, add the cabbage and season with salt and sugar to taste. Cook for an additional 5 minutes until the vegetables are tender.
- Serve the Betawi Vegetable Stew hot with steamed rice.
