Ingredients
- 500g beef, thinly sliced
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 2 tomatoes, quartered
- 1 can (400ml) coconut milk
- 3 cups beef broth
- 3 shallots, finely chopped
- 4 garlic cloves, minced
- 2 teaspoons ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 2 tablespoons cooking oil
- 4 hard-boiled eggs, halved
- Fried shallots for garnish
Instructions
- In a large pot, heat the cooking oil over medium heat. Sauté the shallots and garlic until fragrant.
- Add the beef slices and cook until browned.
- Stir in the ground turmeric, coriander, and cumin until the beef is well coated with the spices.
- Pour in the beef broth and add the lemongrass, kaffir lime leaves, and tomatoes. Bring to a boil, then reduce the heat and simmer for 45 minutes.
- Pour in the coconut milk and season with salt and pepper. Simmer for an additional 15 minutes.
- Discard the lemongrass and kaffir lime leaves. Remove the pot from the heat.
- Divide the soup into serving bowls and add the hard-boiled egg halves. Garnish with fried shallots.
