Ingredients

  • 2 cups jasmine rice
  • 4 cups water
  • 1 stalk lemongrass, bruised
  • 3 kaffir lime leaves
  • 1 tsp ground turmeric
  • 1 tsp salt
  • 1/2 cup coconut milk

Instructions

  1. In a pot, combine the rice, water, lemongrass, kaffir lime leaves, turmeric, and salt.
  2. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  3. Remove the lemongrass and kaffir lime leaves. Stir in the coconut milk and let it sit for 5 minutes.
  4. Fluff the rice with a fork before serving.
