Ingredients
- 2 cups jasmine rice
- 4 cups water
- 1 stalk lemongrass, bruised
- 3 kaffir lime leaves
- 1 tsp ground turmeric
- 1 tsp salt
- 1/2 cup coconut milk
Instructions
- In a pot, combine the rice, water, lemongrass, kaffir lime leaves, turmeric, and salt.
- Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- Remove the lemongrass and kaffir lime leaves. Stir in the coconut milk and let it sit for 5 minutes.
- Fluff the rice with a fork before serving.
