Ingredients

  • 1 lb ground lamb
  • 1 onion, grated
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 lavash bread sheets
  • 1 cup tomato sauce
  • 1 cup plain yogurt
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a bowl, mix the ground lamb, grated onion, minced garlic, paprika, cumin, salt, and pepper until well combined.
  2. Divide the lamb mixture into 4 equal portions and shape each portion into a long, thin kebab shape.
  3. Heat a grill pan or skillet over medium-high heat. Cook the lamb kebabs for about 6-8 minutes, turning occasionally, until they are browned and cooked through.
  4. Warm the lavash bread sheets on the stovetop or in the oven.
  5. Place a cooked lamb kebab on each lavash bread sheet and roll it up tightly.
  6. In a small saucepan, heat the tomato sauce until warmed through.
  7. Serve the Beyti Kebabi with a drizzle of tomato sauce, a dollop of yogurt, and a sprinkle of fresh parsley.
