Bhaja Shimla Mirch (stuffed Bell Peppers)

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 cup diced mixed vegetables (carrots, peas, corn)
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions

  1. Cut the tops off the bell peppers and remove the seeds and membranes.
  2. In a pan, heat 1 tbsp oil and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  3. Add the chopped tomatoes and cook until they turn soft.
  4. Stir in the turmeric, red chili powder, and salt. Cook for a few minutes.
  5. Add the mixed vegetables and cooked rice. Mix well and cook for 5 minutes.
  6. Stuff the bell peppers with the rice and vegetable mixture.
  7. Heat the remaining oil in a pan and place the stuffed bell peppers. Cover and cook on low heat for 15-20 minutes, turning occasionally, until the peppers are tender.
  8. Sprinkle garam masala and garnish with fresh coriander leaves before serving.
