Bhaja Shimla Mirch (stuffed Bell Peppers)
Bhaja Shimla Mirch, or Stuffed Bell Peppers, is a popular dish in Bangladeshi cuisine. It is a flavorful and aromatic dish that is perfect for a hearty meal.
Ingredients
- 4 large bell peppers
- 1 cup cooked rice
- 1 cup diced mixed vegetables (carrots, peas, corn)
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves for garnish
Instructions
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a pan, heat 1 tbsp oil and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add the chopped tomatoes and cook until they turn soft.
- Stir in the turmeric, red chili powder, and salt. Cook for a few minutes.
- Add the mixed vegetables and cooked rice. Mix well and cook for 5 minutes.
- Stuff the bell peppers with the rice and vegetable mixture.
- Heat the remaining oil in a pan and place the stuffed bell peppers. Cover and cook on low heat for 15-20 minutes, turning occasionally, until the peppers are tender.
- Sprinkle garam masala and garnish with fresh coriander leaves before serving.
