Ingredients

  • 500g okra
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • Salt to taste
  • 2 tbsp grated coconut
  • 2 tbsp roasted peanut powder
  • 2 tbsp chopped cilantro
  • 1 tbsp tamarind pulp

Instructions

  1. Wash and pat dry the okra. Slit them vertically, keeping the base intact.
  2. Heat 1 tbsp oil in a pan, add mustard seeds, and let them splutter.
  3. Add turmeric, red chili powder, coriander powder, cumin powder, and salt. Mix well.
  4. In a bowl, mix grated coconut, roasted peanut powder, chopped cilantro, and tamarind pulp.
  5. Stuff the okra with this mixture.
  6. Heat the remaining oil in a pan, arrange the stuffed okra, and cook covered on low heat until they are tender.
  7. Serve hot with roti or rice.
