Ingredients

  • 4 medium-sized bitter gourds
  • 1 cup gram flour (besan)
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp cumin seeds
  • 2 tbsp tamarind pulp
  • 2 tbsp jaggery
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions

  1. Wash the bitter gourds and slit them lengthwise. Remove the seeds and pith.
  2. In a bowl, mix gram flour, turmeric powder, red chili powder, coriander powder, cumin seeds, tamarind pulp, jaggery, and salt to make the stuffing.
  3. Stuff the bitter gourds with the prepared mixture.
  4. Heat oil in a pan and place the stuffed bitter gourds in it. Cook on low heat, turning occasionally, until the gourds are tender.
  5. Garnish with fresh coriander leaves and serve hot.
