Bharli Karli (भरली कारली)
भरली कारली (Bharli Karli) is a traditional Maharashtrian dish made with stuffed bitter gourd. This flavorful and nutritious dish is a popular choice for lunch or dinner.
Ingredients
- 4 medium-sized bitter gourds
- 1 cup gram flour (besan)
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp cumin seeds
- 2 tbsp tamarind pulp
- 2 tbsp jaggery
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves for garnish
Instructions
- Wash the bitter gourds and slit them lengthwise. Remove the seeds and pith.
- In a bowl, mix gram flour, turmeric powder, red chili powder, coriander powder, cumin seeds, tamarind pulp, jaggery, and salt to make the stuffing.
- Stuff the bitter gourds with the prepared mixture.
- Heat oil in a pan and place the stuffed bitter gourds in it. Cook on low heat, turning occasionally, until the gourds are tender.
- Garnish with fresh coriander leaves and serve hot.
