Bharuchi Paneer (भरुची पनीर)
Bharuchi Paneer is a delicious Parsi dish that features paneer (Indian cottage cheese) cooked in a rich and flavorful gravy. This dish is a perfect blend of aromatic spices and creamy texture, making it a favorite among both vegetarians and non-vegetarians.
Ingredients
- 250g paneer, cubed
- 2 onions, finely chopped
- 2 tomatoes, pureed
- 1/2 cup yogurt
- 2 tbsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- 1/2 cup fresh cream
- 2 tbsp ghee (clarified butter)
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat ghee in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a few minutes. Then, add the tomato puree and cook until the oil separates.
- Now, add turmeric powder, red chili powder, and garam masala. Mix well and cook for a couple of minutes.
- Whisk the yogurt and add it to the pan. Cook for 5 minutes, stirring continuously.
- Add the cubed paneer and mix gently. Cook for another 5 minutes on low heat.
- Finally, add fresh cream and salt. Stir well and cook for 2-3 minutes.
- Garnish with fresh coriander leaves and serve hot with naan or rice.
