Bharwa Shimla Mirch (stuffed Bell Peppers)

Ingredients

  • 4 large bell peppers
  • 2 medium potatoes, boiled and mashed
  • 1 cup green peas, boiled
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger paste
  • 1 teaspoon green chili paste
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons fresh coriander leaves, chopped

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add ginger paste and green chili paste. Sauté for a minute.
  2. Add mashed potatoes, green peas, coriander powder, turmeric powder, garam masala, and salt. Mix well and cook for 2-3 minutes.
  3. Turn off the heat and add chopped coriander leaves. Let the mixture cool.
  4. Preheat the oven to 375°F (190°C).
  5. Cut the tops off the bell peppers and remove the seeds and membranes from the insides.
  6. Stuff the bell peppers with the prepared mixture and place them in a baking dish.
  7. Cover the dish with foil and bake for 20-25 minutes, or until the bell peppers are tender.
  8. Remove the foil and bake for an additional 5 minutes to lightly brown the tops.
  9. Serve the Bharwa Shimla Mirch hot with roti or rice.
