Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup finely chopped onions
  • 1/2 cup chopped tomatoes
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup chopped cashews
  • Salt to taste
  • 2 tablespoons oil

Instructions

  1. Make a deep slit in each chicken breast to create a pocket for the stuffing.
  2. In a bowl, mix together onions, tomatoes, ginger-garlic paste, cumin powder, coriander powder, turmeric powder, red chili powder, cilantro, mint leaves, cashews, and salt.
  3. Stuff each chicken breast with the mixture.
  4. Heat oil in a pan over medium heat and place the stuffed chicken breasts in the pan.
  5. Cook for 10-12 minutes on each side or until the chicken is fully cooked.
  6. Serve hot with naan or rice.
