Bharwan Paratha (stuffed Parathas)

Ingredients

  • 2 cups whole wheat flour
  • Water, as needed
  • 1 cup mixed vegetable filling (potatoes, peas, carrots, etc.)
  • 1 tsp cumin seeds
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • Salt, to taste
  • Oil, for cooking

Instructions

  1. In a mixing bowl, combine the whole wheat flour and water to make a soft dough. Cover and let it rest for 15 minutes.
  2. In a separate bowl, mix the mixed vegetable filling with cumin seeds, red chili powder, turmeric powder, and salt to make the stuffing.
  3. Divide the dough into equal-sized balls and roll each ball into a small circle.
  4. Place a portion of the vegetable stuffing in the center of the circle and seal the edges to enclose the filling.
  5. Roll out the stuffed dough ball into a paratha, using some flour to prevent sticking.
  6. Heat a griddle or skillet over medium heat and cook the paratha with oil until golden brown on both sides.
  7. Repeat the process with the remaining dough and filling to make more parathas.
  8. Serve hot with yogurt, pickles, or chutney.
