Ingredients

  • 4 large bell peppers
  • 3 large potatoes, boiled and mashed
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon red chili powder
  • 2 tablespoons oil
  • Salt to taste

Instructions

  1. Preheat the oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  2. Add the tomato puree and cook until the oil separates from the masala.
  3. Meanwhile, cut the tops off the bell peppers and remove the seeds. Stuff the peppers with the mashed potato filling.
  4. Add the stuffed bell peppers to the pan and pour any remaining filling over them. Add water, cover, and cook for 15-20 minutes until the peppers are tender.
  5. Garnish with coriander leaves and serve hot with rice or roti.
