Bharwan Shimla Mirch Curry, also known as Stuffed Bell Pepper Curry, is a delicious and flavorful dish from Saraiki Cuisine. The dish features bell peppers stuffed with a spiced potato filling, cooked in a rich and aromatic gravy.
Ingredients
- 4 large bell peppers
- 3 large potatoes, boiled and mashed
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon red chili powder
- 2 tablespoons oil
- Salt to taste
Instructions
- Preheat the oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add the tomato puree and cook until the oil separates from the masala.
- Meanwhile, cut the tops off the bell peppers and remove the seeds. Stuff the peppers with the mashed potato filling.
- Add the stuffed bell peppers to the pan and pour any remaining filling over them. Add water, cover, and cook for 15-20 minutes until the peppers are tender.
- Garnish with coriander leaves and serve hot with rice or roti.
