Bharwan Shimla Mirch Curry (stuffed Capsicum Curry)

Ingredients

  • 4 large bell peppers (Shimla Mirch)
  • 3 medium potatoes, boiled and mashed
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnish

Instructions

  1. Prepare the bell peppers by cutting off the tops and removing the seeds and membranes.
  2. In a pan, heat 1 tablespoon of oil and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  3. Add ginger-garlic paste and sauté for a minute. Then, add chopped tomatoes and cook until they turn mushy.
  4. Now, add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes.
  5. Add mashed potatoes and garam masala. Mix everything together and cook for 2-3 minutes. The stuffing for the bell peppers is ready.
  6. Stuff the prepared bell peppers with the potato mixture and set aside.
  7. In a separate pan, heat the remaining oil and place the stuffed bell peppers. Cook them for a few minutes until they start to soften.
  8. Pour the remaining potato mixture and any leftover stuffing around the bell peppers. Add a little water, cover the pan, and let it simmer for 15-20 minutes until the bell peppers are cooked through.
  9. Garnish with fresh coriander leaves and serve hot with roti or rice.
