Bharwan Shimla Mirch Curry (stuffed Capsicum Curry)
Bharwan Shimla Mirch Curry, also known as Stuffed Capsicum Curry, is a delicious and flavorful dish from Saraiki Cuisine. This dish features bell peppers stuffed with a spiced potato filling and cooked in a rich and aromatic gravy.
Ingredients
- 4 large bell peppers (Shimla Mirch)
- 3 medium potatoes, boiled and mashed
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves for garnish
Instructions
- Prepare the bell peppers by cutting off the tops and removing the seeds and membranes.
- In a pan, heat 1 tablespoon of oil and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a minute. Then, add chopped tomatoes and cook until they turn mushy.
- Now, add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes.
- Add mashed potatoes and garam masala. Mix everything together and cook for 2-3 minutes. The stuffing for the bell peppers is ready.
- Stuff the prepared bell peppers with the potato mixture and set aside.
- In a separate pan, heat the remaining oil and place the stuffed bell peppers. Cook them for a few minutes until they start to soften.
- Pour the remaining potato mixture and any leftover stuffing around the bell peppers. Add a little water, cover the pan, and let it simmer for 15-20 minutes until the bell peppers are cooked through.
- Garnish with fresh coriander leaves and serve hot with roti or rice.
