Bhindi Masala (spiced Okra Curry)
Bhindi Masala, also known as Spiced Okra Curry, is a popular dish in Pashtun Cuisine. This flavorful and aromatic curry is made with tender okra cooked in a blend of spices, creating a delicious and satisfying dish.
Ingredients
- 1 pound okra, washed and dried
- 2 tablespoons oil
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Trim the ends of the okra and cut them into 1-inch pieces.
- Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add ginger and garlic paste, and sauté for a minute.
- Add the chopped tomatoes, coriander powder, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft and the oil separates.
- Add the okra pieces and cook on medium heat, stirring occasionally, until the okra is tender and cooked through.
- Garnish with fresh cilantro and serve hot with rice or naan.
