Bhindi Masala (spiced Okra Curry)

Ingredients

  • 1 pound okra, washed and dried
  • 2 tablespoons oil
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Trim the ends of the okra and cut them into 1-inch pieces.
  2. Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  3. Add ginger and garlic paste, and sauté for a minute.
  4. Add the chopped tomatoes, coriander powder, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft and the oil separates.
  5. Add the okra pieces and cook on medium heat, stirring occasionally, until the okra is tender and cooked through.
  6. Garnish with fresh cilantro and serve hot with rice or naan.
