Bhindi Masala (spicy Okra Stir-fry)

Ingredients
- 500g okra, washed and dried
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Trim the ends of the okra and cut them into 1-inch pieces.
- Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add the ginger and garlic paste, and cook for a minute.
- Stir in the chopped tomatoes and cook until they soften.
- Add the coriander powder, turmeric powder, red chili powder, and salt. Mix well.
- Add the okra pieces and stir to combine with the spices. Cover and cook for 10-12 minutes, stirring occasionally, until the okra is tender.
- Garnish with fresh coriander leaves and serve hot with roti or naan.
