Bhoj (traditional Sikkimese Thali)

Ingredients
- Steamed rice
- Khadeko dal (Sikkimese-style lentils)
- Phagshapa (Pork with radish)
- Saag (Leafy green vegetable curry)
- Gundruk (Fermented leafy greens)
- Sel roti (Rice-based bread)
- Sinki (Fermented radish taproot)
- Chhurpi (Fermented cheese)
- Achar (Pickle)
Instructions
- Prepare steamed rice and keep it aside.
- Cook Khadeko dal in a pressure cooker until soft and set aside.
- In a separate pot, cook Phagshapa with radish until the pork is tender.
- Prepare Saag by cooking leafy greens with spices and seasonings.
- Rehydrate Gundruk by soaking it in water.
- Fry Sel roti until golden brown and crispy.
- Soak Sinki in water to rehydrate.
- Serve Chhurpi as a side dish.
- Serve Achar as a condiment.
