Ingredients

  • Steamed rice
  • Khadeko dal (Sikkimese-style lentils)
  • Phagshapa (Pork with radish)
  • Saag (Leafy green vegetable curry)
  • Gundruk (Fermented leafy greens)
  • Sel roti (Rice-based bread)
  • Sinki (Fermented radish taproot)
  • Chhurpi (Fermented cheese)
  • Achar (Pickle)

Instructions

  1. Prepare steamed rice and keep it aside.
  2. Cook Khadeko dal in a pressure cooker until soft and set aside.
  3. In a separate pot, cook Phagshapa with radish until the pork is tender.
  4. Prepare Saag by cooking leafy greens with spices and seasonings.
  5. Rehydrate Gundruk by soaking it in water.
  6. Fry Sel roti until golden brown and crispy.
  7. Soak Sinki in water to rehydrate.
  8. Serve Chhurpi as a side dish.
  9. Serve Achar as a condiment.
