Bhojpuri Style Chickpea Curry (bhojpuri Chana Masala)

Ingredients
- 2 cups dried chickpeas, soaked overnight
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 2 green chilies, slit
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 2 teaspoons coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala
- 1 teaspoon red chili powder
- 2 tablespoons cooking oil
- Salt to taste
- Fresh cilantro leaves for garnish
Instructions
- Heat oil in a large pot over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Stir in minced garlic, grated ginger, and green chilies. Sauté for a few minutes.
- Add the tomato puree, turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Cook until the oil separates from the masala.
- Add the soaked chickpeas and mix well. Pour in enough water to cover the chickpeas and bring to a boil.
- Reduce the heat, cover the pot, and simmer for 30-35 minutes or until the chickpeas are tender.
- Sprinkle garam masala and garnish with fresh cilantro leaves before serving.
