Bhuna Mangsho (Spicy Slow-cooked Mutton)

Ingredients

  • 1 kg mutton, cut into pieces
  • 2 onions, finely sliced
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 4-5 green chilies, slit
  • 1 cup plain yogurt
  • 4 tablespoons mustard oil
  • Salt to taste
  • 2 cups water

Instructions

  1. Heat the mustard oil in a heavy-bottomed pan and add the sliced onions. Cook until golden brown.
  2. Add the ginger and garlic paste, and cook for a few minutes until the raw smell disappears.
  3. Now, add the mutton pieces and cook on high heat until they are browned.
  4. Reduce the heat and add the turmeric, red chili, cumin, and coriander powders. Stir well.
  5. Add the plain yogurt and green chilies, and cook until the oil separates.
  6. Pour in the water, cover the pan, and let the mutton cook on low heat for about 2 hours or until tender.
  7. Once the mutton is cooked, check for seasoning and adjust if needed. Serve hot with steamed rice or naan.
