Spicy Slow-cooked Mutton (Bhuna Mangsho) is a traditional dish from Sylheti Cuisine, known for its rich and aromatic flavors. This slow-cooked mutton dish is packed with spices and tender meat, making it a perfect choice for a hearty meal.
Ingredients
- 1 kg mutton, cut into pieces
- 2 onions, finely sliced
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 4-5 green chilies, slit
- 1 cup plain yogurt
- 4 tablespoons mustard oil
- Salt to taste
- 2 cups water
Instructions
- Heat the mustard oil in a heavy-bottomed pan and add the sliced onions. Cook until golden brown.
- Add the ginger and garlic paste, and cook for a few minutes until the raw smell disappears.
- Now, add the mutton pieces and cook on high heat until they are browned.
- Reduce the heat and add the turmeric, red chili, cumin, and coriander powders. Stir well.
- Add the plain yogurt and green chilies, and cook until the oil separates.
- Pour in the water, cover the pan, and let the mutton cook on low heat for about 2 hours or until tender.
- Once the mutton is cooked, check for seasoning and adjust if needed. Serve hot with steamed rice or naan.
