Ingredients
- 2 cups of diced potatoes
- 1 cup of diced carrots
- 1 cup of diced bell peppers
- 1 cup of diced onions
- 2 cups of diced tomatoes
- 1 cup of shredded Bhutanese cheese (datshi)
- 4-6 green chilies, sliced
- 3 cloves of garlic, minced
- 1 teaspoon of turmeric
- 1 teaspoon of cumin powder
- Salt to taste
- 2 tablespoons of oil
- 4 cups of water
Instructions
- Heat oil in a large pot over medium heat.
- Add garlic and green chilies, and sauté for 2-3 minutes.
- Add onions and sauté until they turn translucent.
- Add turmeric, cumin powder, and salt. Stir well.
- Add potatoes, carrots, and bell peppers. Cook for 5 minutes.
- Add tomatoes and cook for another 5 minutes.
- Pour in water and bring the stew to a gentle boil.
- Add the shredded cheese and stir until it melts and thickens the stew.
- Simmer for 15-20 minutes until the vegetables are tender.
- Adjust seasoning if needed and serve hot.
