Bhutanese Cheese And Pork Curry (ema Phagsha)

Ingredients
- 500g pork, cut into bite-sized pieces
- 2 cups of diced fresh green chilies
- 1 large onion, thinly sliced
- 1 cup of grated local Bhutanese cheese (Datshi)
- 3 cloves of garlic, minced
- 1 teaspoon of ginger, grated
- 1 teaspoon of turmeric
- 1 teaspoon of cumin powder
- 1 teaspoon of coriander powder
- 2 tablespoons of vegetable oil
- Salt to taste
- Water
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the sliced onions and sauté until they are soft and translucent.
- Add the minced garlic, grated ginger, turmeric, cumin powder, and coriander powder. Stir well to combine.
- Add the pork pieces to the pot and cook until they are browned on all sides.
- Add the diced green chilies and stir to combine with the pork.
- Pour in enough water to cover the pork and chilies, then bring the mixture to a simmer.
- Cover the pot and let the curry simmer for about 45 minutes, or until the pork is tender.
- Once the pork is tender, add the grated cheese to the pot and stir until it is melted and well incorporated into the curry.
- Season with salt to taste and simmer for an additional 10 minutes.
- Remove from heat and serve the Ema Phagsha hot with steamed rice or Bhutanese red rice.
