Ingredients
- 1 lb pork, cut into bite-sized pieces
- 1 cup Bhutanese cheese, cubed
- 2 onions, sliced
- 4-5 green chilies, sliced
- 1 cup tomatoes, diced
- 1 cup mixed vegetables (carrots, green beans, bell peppers)
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 2 tbsp vegetable oil
- 1 tsp turmeric
- 1 tsp cumin powder
- Salt to taste
- 4 cups cooked rice
Instructions
- Heat vegetable oil in a large pot over medium heat.
- Add the pork and cook until browned.
- Add the onions, green chilies, garlic, and ginger. Cook until the onions are soft.
- Stir in the tomatoes, turmeric, cumin powder, and salt. Cook for 5 minutes.
- Add the mixed vegetables and Bhutanese cheese. Cover and simmer for 20 minutes.
- Serve the stew over cooked rice.
