Ingredients

  • 1 lb pork, cut into bite-sized pieces
  • 1 cup Bhutanese cheese, cubed

  • 4-5 green chilies, sliced
  • 1 cup tomatoes, diced
  • 1 cup mixed vegetables (carrots, green beans, bell peppers)
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 2 tbsp vegetable oil
  • 1 tsp turmeric
  • 1 tsp cumin powder
  • Salt to taste
  • 4 cups cooked rice

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add the pork and cook until browned.
  3. Add the onions, green chilies, garlic, and ginger. Cook until the onions are soft.
  4. Stir in the tomatoes, turmeric, cumin powder, and salt. Cook for 5 minutes.
  5. Add the mixed vegetables and Bhutanese cheese. Cover and simmer for 20 minutes.
  6. Serve the stew over cooked rice.
