Ingredients

  • 1 lb (450g) mushrooms, sliced
  • 2 cups (200g) shredded cheese (traditionally used is Bhutanese yak cheese, but you can use cheddar or any other cheese with a similar texture)
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 3-4 green chilies, slit lengthwise
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a pan over medium heat. Add the cumin seeds and let them splutter.
  2. Add the chopped onions and green chilies. Sauté until the onions are translucent.
  3. Add the turmeric, coriander powder, and red chili powder. Stir well to combine.
  4. Add the sliced mushrooms and cook until they are tender.
  5. Add the diced tomatoes and cook until they soften and release their juices.
  6. Reduce the heat to low and add the shredded cheese. Stir gently until the cheese melts and forms a creamy sauce.
  7. Season with salt to taste and garnish with fresh cilantro.
  8. Serve the Bhutanese Mushroom and Cheese Curry hot with steamed rice or Bhutanese red rice.
