Bhutanese Mushroom Curry (zow Shungo)

Ingredients

  • 2 cups sliced mushrooms
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1 cup water
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a pan over medium heat.
  2. Add the chopped onions and minced garlic, and sauté until the onions are translucent.
  3. Add the sliced mushrooms and cook until they release their moisture and start to brown.
  4. Stir in the turmeric, cumin, coriander, red chili powder, and salt, and cook for another 2 minutes.
  5. Pour in the water and simmer for 10-15 minutes until the curry thickens.
  6. Garnish with fresh cilantro and serve hot with steamed rice or Bhutanese red rice.
