Bhutanese Mushroom Curry (zow Shungo)
Bhutanese Mushroom Curry, also known as Zow Shungo, is a flavorful and aromatic dish from Bhutanese cuisine. This vegetarian curry is made with mushrooms, onions, garlic, and a blend of traditional Bhutanese spices, creating a rich and satisfying meal.
Ingredients
- 2 cups sliced mushrooms
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon red chili powder
- 1/2 teaspoon salt
- 2 tablespoons vegetable oil
- 1 cup water
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a pan over medium heat.
- Add the chopped onions and minced garlic, and sauté until the onions are translucent.
- Add the sliced mushrooms and cook until they release their moisture and start to brown.
- Stir in the turmeric, cumin, coriander, red chili powder, and salt, and cook for another 2 minutes.
- Pour in the water and simmer for 10-15 minutes until the curry thickens.
- Garnish with fresh cilantro and serve hot with steamed rice or Bhutanese red rice.
