Bhutanese Pork Stew (phaksha Tshoem)

Ingredients

  • 1 lb pork, cubed
  • 2 tbsp vegetable oil
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tomatoes, chopped
  • 2 green chilies, sliced
  • 1 tsp turmeric
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt to taste
  • 2 cups water
  • 1 cup spinach, chopped

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add the sliced onion, minced garlic, and grated ginger. Sauté until the onion is translucent.
  3. Add the cubed pork and cook until browned on all sides.
  4. Stir in the chopped tomatoes, green chilies, turmeric, cumin powder, coriander powder, and salt. Cook for 5 minutes.
  5. Pour in the water and bring the stew to a boil. Reduce heat, cover, and simmer for 1.5 hours, or until the pork is tender.
  6. Add the chopped spinach and cook for an additional 5 minutes.
  7. Adjust seasoning if needed and serve hot.
