Ingredients

  • 1 lb pork shoulder, cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tomatoes, diced
  • 2 cups mixed vegetables (carrots, green beans, bell peppers)
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • 2 cups cooked rice
  • Fresh cilantro for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onions are translucent.
  3. Add the diced tomatoes and cook until they are soft and pulpy.
  4. Add the pork pieces to the pot and cook until browned on all sides.
  5. Stir in the cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well to coat the pork.
  6. Pour in enough water to cover the pork and bring to a simmer. Cover and cook for 45-50 minutes, or until the pork is tender.
  7. Add the mixed vegetables to the pot and cook for an additional 5-7 minutes, or until the vegetables are tender.
  8. Serve the Bhutanese Pork Stew over cooked rice, garnished with fresh cilantro.
