Ingredients
- 1 lb pork shoulder, cut into bite-sized pieces
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tomatoes, diced
- 2 cups mixed vegetables (carrots, green beans, bell peppers)
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- Salt to taste
- 2 cups cooked rice
- Fresh cilantro for garnish
Instructions
- Heat vegetable oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté until the onions are translucent.
- Add the diced tomatoes and cook until they are soft and pulpy.
- Add the pork pieces to the pot and cook until browned on all sides.
- Stir in the cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well to coat the pork.
- Pour in enough water to cover the pork and bring to a simmer. Cover and cook for 45-50 minutes, or until the pork is tender.
- Add the mixed vegetables to the pot and cook for an additional 5-7 minutes, or until the vegetables are tender.
- Serve the Bhutanese Pork Stew over cooked rice, garnished with fresh cilantro.
