Ingredients
- 1 lb pork belly, cut into bite-sized pieces
- 1 onion, sliced
- 3-4 cloves garlic, minced
- 1 inch ginger, grated
- 2 tomatoes, chopped
- 2-3 green chilies, sliced
- 1 cup radish, sliced
- 1 cup spinach, chopped
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- Salt to taste
- 2 cups water
Instructions
- Heat a large pot over medium heat and add the pork belly. Cook until the fat is rendered and the pork is browned.
- Add the sliced onion, minced garlic, and grated ginger. Cook until the onions are soft and translucent.
- Stir in the chopped tomatoes, green chilies, and spices. Cook for a few minutes until the tomatoes break down.
- Add the sliced radish and water. Cover and simmer for 30-40 minutes until the pork is tender.
- Stir in the chopped spinach and cook for an additional 5 minutes.
- Season with salt to taste and serve hot.
