Ingredients

  • 1 lb pork belly, cut into bite-sized pieces
  • 1 onion, sliced
  • 3-4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tomatoes, chopped
  • 2-3 green chilies, sliced
  • 1 cup radish, sliced
  • 1 cup spinach, chopped
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt to taste
  • 2 cups water

Instructions

  1. Heat a large pot over medium heat and add the pork belly. Cook until the fat is rendered and the pork is browned.
  2. Add the sliced onion, minced garlic, and grated ginger. Cook until the onions are soft and translucent.
  3. Stir in the chopped tomatoes, green chilies, and spices. Cook for a few minutes until the tomatoes break down.
  4. Add the sliced radish and water. Cover and simmer for 30-40 minutes until the pork is tender.
  5. Stir in the chopped spinach and cook for an additional 5 minutes.
  6. Season with salt to taste and serve hot.
