Ingredients
- 1 lb pork shoulder, cut into cubes
- 2 tbsp vegetable oil
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tomatoes, chopped
- 2 cups mixed vegetables (carrots, green beans, cauliflower)
- 1 tsp turmeric
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp chili powder
- Salt to taste
- 2 cups water
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the sliced onion, minced garlic, and grated ginger. Cook until the onions are soft and translucent.
- Add the pork cubes and cook until browned on all sides.
- Stir in the chopped tomatoes, mixed vegetables, turmeric, cumin powder, coriander powder, chili powder, and salt. Cook for 5 minutes.
- Pour in the water and bring the stew to a boil. Reduce the heat, cover, and simmer for 45 minutes to 1 hour, or until the pork is tender.
- Adjust the seasoning if needed and serve hot.
