Ingredients

  • 1 lb pork shoulder, cut into cubes
  • 2 tbsp vegetable oil
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tomatoes, chopped
  • 2 cups mixed vegetables (carrots, green beans, cauliflower)
  • 1 tsp turmeric
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp chili powder
  • Salt to taste
  • 2 cups water

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the sliced onion, minced garlic, and grated ginger. Cook until the onions are soft and translucent.
  3. Add the pork cubes and cook until browned on all sides.
  4. Stir in the chopped tomatoes, mixed vegetables, turmeric, cumin powder, coriander powder, chili powder, and salt. Cook for 5 minutes.
  5. Pour in the water and bring the stew to a boil. Reduce the heat, cover, and simmer for 45 minutes to 1 hour, or until the pork is tender.
  6. Adjust the seasoning if needed and serve hot.
